Boiled Egg and Smoked Salmon Breakfast Bowl

Choose any of your favourite veg like asparagus, mushrooms or leftovers. We’ve gone with the following ingredients:

– 2 boiled eggs
– 1 or 2 pieces of smoked salmon
– Handful of spinach or rocket
– 1/2 Lebanese cucumber
– 1/2 tomato
– 1 radish
– 1/4 avocado
– Wedge of lemon
– Salt & pepper
– Capers (optional)


1. Put cold water on the stove with eggs and bring to boil. When the water starts boiling, set your timer for 3 minutes so you don’t forgot to remove them
2. Cut your salad items up & arrange in a bowl
3. Once finished boiling, peel eggs cut in half and add to your breakfast bowl
4. Cover with a squeeze of lemon & a pinch of salt and pepper and you’re done.

It’s that easy! Serves 1 (takes 10 mins). Super easy to adapt if you’re vegetarian or vegan. Just remove the salmon or eggs and replace with another protein like tofu.
